Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 shallot, finely minced
  • 2 garlic cloves, minced
  • 2 tablespoons Dijon mustard
  • 1 cup dry white wine
  • 0.5 cup chicken stock
  • 0.25 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare the shrimp by rinsing thoroughly under cold water. Pat them dry with a paper towel and set aside.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter and 1 tablespoon of olive oil.

Step 3

Add the minced shallot and garlic to the skillet, and sauté for 2-3 minutes until softened and fragrant, stirring frequently to avoid burning.

Step 4

Stir in the Dijon mustard, followed by the white wine. Allow the liquid to simmer for 2-3 minutes to reduce slightly.

Step 5

Add the chicken stock and bring the mixture to a gentle boil. Simmer for another 3-4 minutes until the sauce has reduced by half.

Step 6

Lower the heat to medium-low, then stir in the heavy cream and lemon juice. Allow the sauce to simmer for 2-3 minutes until thickened.

Step 7

Season the shrimp with salt and black pepper. Add them to the skillet, cooking for 4-5 minutes until they turn pink and are opaque, flipping once midway through cooking.

Step 8

Remove the skillet from heat and stir in the remaining tablespoon of butter to add richness and shine to the sauce.

Step 9

Garnish with freshly chopped parsley and serve immediately. This dish pairs wonderfully with rice, crusty bread, or steamed vegetables.
