Ingredients

  • 12 pieces Raw shrimp (peeled, deveined)
  • 2 tablespoons Olive oil
  • 2 cups Baby spinach
  • 1 large Yellow onion (thinly sliced)
  • 1 teaspoon Sugar
  • 1 (12-inch round) Pizza dough (store-bought or homemade)
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)
  • 2 cloves Garlic (minced)
  • 0.5 teaspoons Crushed red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Cornmeal (for dusting)

Directions

Step 1

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.

Step 2

In a skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, for 10-15 minutes until the onions are golden brown and caramelized. Add the sugar in the last couple of minutes to enhance sweetness.

Step 3

In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Toss in the shrimp, sprinkle with salt and black pepper, and cook for 2-3 minutes per side until pink and opaque. Remove from heat and set aside.

Step 4

In the same skillet, lightly sauté the baby spinach for 1-2 minutes until just wilted. Set aside and let any excess liquid drain.

Step 5

On a clean surface, stretch out your pizza dough into a 12-inch round. Sprinkle the surface or pizza peel with a tablespoon of cornmeal to prevent sticking.

Step 6

Spread the caramelized onions evenly over the pizza dough, leaving a small border for the crust. Sprinkle half of the mozzarella and Parmesan cheeses on top.

Step 7

Distribute the cooked shrimp and sautéed spinach evenly on the pizza. Sprinkle the remaining cheese over the toppings and finish with a pinch of red pepper flakes for a slight kick.

Step 8

Transfer the pizza to the oven (or onto the hot pizza stone if using) and bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

Step 9

Remove the pizza from the oven and let it cool for 2-3 minutes. Slice and serve immediately.
