Ingredients

  • 12 pieces Large shrimp, peeled and deveined
  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 cup Cherry tomatoes, diced
  • 2 tablespoons Fresh basil, chopped
  • 1 tablespoon Balsamic vinegar
  • 1 loaf French baguette, sliced into 12 pieces
  • 2 tablespoons Parmesan cheese, grated
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a small bowl, combine the diced cherry tomatoes, chopped basil, balsamic vinegar, 1 tablespoon of olive oil, and a pinch of salt and pepper. Stir well and set aside to allow the flavors to meld.

Step 3

Brush both sides of the baguette slices lightly with 1 tablespoon of olive oil and place them on a baking sheet. Toast in the preheated oven for 5 minutes, flipping halfway through, until lightly golden and crisp.

Step 4

In a skillet, heat the remaining 1 tablespoon of olive oil and the butter over medium heat until melted.

Step 5

Add the minced garlic to the skillet and sauté for about 30 seconds, being careful not to let it burn.

Step 6

Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side, or until they turn pink and are fully cooked. Remove from heat and set aside.

Step 7

To assemble, place the toasted baguette slices on a serving platter. Spoon a generous amount of the tomato-basil mixture onto each slice.

Step 8

Top each bruschetta with a cooked shrimp and a light sprinkle of grated Parmesan cheese.

Step 9

Serve immediately and enjoy!
