Ingredients

  • 500 grams Shrimp, peeled and deveined
  • 2 cups Moringa leaves (fresh)
  • 400 ml Coconut milk
  • 3 cloves Garlic, minced
  • 1 medium Onion, finely chopped
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 piece Bird's eye chili, finely chopped (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the shrimp under cold water and pat dry. Season with a pinch of salt and black pepper. Set aside.

Step 2

Pick the moringa leaves from their stems, wash thoroughly, and set aside.

Step 3

Heat the vegetable oil in a large pan or wok over medium heat.

Step 4

Add the chopped onion and sauté until translucent, about 3-4 minutes.

Stir in the minced garlic, grated ginger, and chopped chili (if using). Sauté for another 1-2 minutes until fragrant.
