Ingredients

  • 500 grams large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves (minced)
  • 3 tablespoons unsalted butter
  • 1 piece small onion (finely chopped)
  • 120 milliliters dry white wine
  • 180 milliliters heavy cream
  • 1 pinch saffron threads
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 4 pieces lemon wedges

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Season the shrimp with a pinch of salt, pepper, and paprika.

Step 3

Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and the butter. Heat until the butter is melted.

Step 5

Add the onion and garlic to the skillet, cooking until softened and fragrant, about 3-4 minutes.

Step 6

Pour in the white wine and deglaze the skillet by scraping up any browned bits on the bottom. Let the wine simmer for 2-3 minutes to reduce slightly.

Step 7

Lower the heat and stir in the heavy cream and saffron threads. Let the sauce simmer gently for 5 minutes, allowing the flavors to meld.

Step 8

Return the cooked shrimp to the skillet. Stir to coat the shrimp in the saffron sauce and cook for another 2-3 minutes to heat through.

Step 9

Adjust the seasoning with additional salt and pepper to taste.

Step 10

Garnish the dish with chopped fresh parsley and serve immediately with lemon wedges on the side.
