  • 12 ounces Linguini pasta

  • 4 (minced) Garlic cloves

  • 1 28-ounce can Crushed tomatoes
  • 0.5 cup Dry white wine
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 0.25 cup (chopped) Fresh basil leaves
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 0.25 cup (grated, optional for garnish) Parmesan cheese
  • 2 tablespoons (chopped, optional for garnish) Parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguini pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and season with a pinch of salt and black pepper. Cook for 1-2 minutes on each side until just pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes. Sauté for 30 seconds to 1 minute until fragrant, stirring frequently to prevent burning.

Add the cooked linguini to the skillet and toss to combine with the shrimp and sauce. If the sauce is too thick, add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.

Remove the skillet from heat and stir in the chopped fresh basil leaves. Taste and adjust seasoning if necessary.

Serve hot, garnished with grated Parmesan cheese and chopped parsley, if desired.
