Ingredients

  • 12 oz linguini pasta
  • 1 lb large shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 0.5 tsp red pepper flakes (optional)
  • 1 lemon (zest and juice)
  • 2 tbsp fresh parsley (chopped)
  • 0 to taste salt
  • 0 to taste black pepper
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguini pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the remaining water and set the pasta aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the shrimp in a single layer, seasoning lightly with salt and pepper. Cook for about 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, lower the heat to medium and add the butter. Stir until melted, then add the minced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until the garlic is fragrant but not browned.

Step 4

Add the zest and juice of the lemon to the skillet, then stir to combine. Return the cooked shrimp to the skillet and toss to coat in the garlic butter sauce.

Step 5

Add the cooked linguini to the skillet and toss everything together. Gradually add some of the reserved pasta water, a little at a time, to loosen the sauce and coat the pasta until desired consistency is reached.

Step 6

Sprinkle the chopped parsley over the pasta and toss once more. Adjust seasoning with additional salt and black pepper as needed.

Step 7

Serve the shrimp linguini hot, garnished with grated Parmesan cheese if desired. Enjoy!
