  • 500 grams Shrimp (peeled and deveined)
  • 100 grams Plain yogurt
  • 1 large Onion
  • 4 Garlic cloves
  • 1 inch Ginger
  • 1 large Tomato
  • 10 Cashews
  • 200 ml Coconut milk
  • 2 tablespoons Ghee or vegetable oil
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 100 ml Water
  • 2 tablespoons Fresh cilantro leaves (optional, for garnish)

Directions

Step 1

In a small bowl, soak the cashews in warm water for 10 minutes. Once softened, blend them with the yogurt to form a smooth paste. Set aside.

Step 2

Finely chop the onion, garlic, and ginger. Roughly chop the tomato and set them aside separately.

Step 3

Heat ghee or vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown, about 5-6 minutes.

Add the garlic and ginger to the pan and cook for another 1-2 minutes until fragrant.

Stir in the ground coriander, ground cumin, turmeric powder, and red chili powder. Cook for 1 minute to toast the spices.
