Ingredients

  • 12 ounces Linguine pasta
  • 1 pound Raw shrimp (peeled and deveined)
  • 3 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 2 cups Cherry tomatoes (halved)
  • 1 cup Dry white wine
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Crushed red pepper flakes
  • 0.25 cup Fresh basil leaves (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 0.25 cup Grated Parmesan cheese (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the raw shrimp in a single layer and cook for 1-2 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for about 30 seconds, until fragrant.

Step 4

Add the cherry tomatoes, and cook for 5 minutes, stirring occasionally, until the tomatoes begin to break down and release their juices.

Step 5

Stir in the white wine, tomato paste, dried oregano, crushed red pepper flakes, salt, and black pepper. Let the sauce simmer for 5 minutes, allowing it to slightly thicken.

Step 6

Return the cooked shrimp to the skillet and toss to coat with the sauce. Add the chopped fresh basil and stir to combine.

Step 7

If the sauce is too thick, stir in some of the reserved pasta water, a tablespoon at a time, until the desired consistency is reached.

Step 8

Divide the cooked linguine among serving plates and spoon the shrimp and sauce over the top.

Step 9

Garnish with grated Parmesan cheese and serve immediately.
