Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 15 ounces hominy (drained and rinsed)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 2 scallions, thinly sliced
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 0 tortilla chips or crusty bread (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Add the shrimp to the skillet, season with 0.5 teaspoon of salt, black pepper, smoked paprika, and cumin. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through. Remove them from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to low and stir in the cream cheese until melted and smooth. Add the sour cream and mix well.

Step 5

Stir in the cheddar cheese, continuing to mix until fully melted and incorporated.

Step 6

Add the cooked shrimp (reserving a few for garnish), hominy, scallions, and optional hot sauce to the cheese mixture. Mix until combined.

Step 7

Transfer the mixture to an oven-safe dish. Sprinkle a little extra shredded cheddar cheese on top if desired.

Step 8

Bake in the preheated oven for 15 minutes or until bubbly and golden on top.

Step 9

Remove from the oven and garnish with the reserved shrimp and chopped cilantro.

Step 10

Serve hot with tortilla chips or crusty bread for dipping.
