Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 4 tablespoons unsalted butter
  • 1 cup sharp cheddar cheese (shredded)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 3 cloves garlic (minced)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.25 cup green onions (thinly sliced for garnish)
  • 0.25 cup crispy cooked bacon (crumbled, optional)

Directions

Step 1

In a medium saucepan, bring the water to a boil. Slowly stir in the stone-ground grits, reduce the heat to low, and simmer for about 15-20 minutes, stirring frequently to prevent sticking.

Step 2

Once the grits are tender and creamy, stir in 4 tablespoons of unsalted butter, the shredded cheddar cheese, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Mix well until the cheese is fully melted and incorporated. Remove from heat and cover to keep warm.

Step 3

Season the peeled and deveined shrimp with 1 teaspoon of smoked paprika, 1 teaspoon of Cajun seasoning, and a pinch of salt and black pepper.

Step 4

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Step 5

Add the seasoned shrimp to the skillet and cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Be careful not to overcook.

Step 6

Squeeze 2 tablespoons of fresh lemon juice over the cooked shrimp and give the skillet a quick stir to coat the shrimp in the lemony, garlicky sauce. Remove from heat.

Step 7

To assemble, spoon the warm grits onto individual plates or bowls. Top with the cooked shrimp and the flavorful pan juices.

Step 8

Garnish with thinly sliced green onions and crumbled crispy bacon if desired. Serve immediately and enjoy!
