Ingredients

  • 12 ounces fettuccini pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons parsley, chopped (optional for garnish)
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccini pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set aside.

Step 2

While the pasta cooks, pat the shrimp dry with paper towels and season lightly with salt and black pepper.

Step 3

In a large skillet over medium heat, melt 1 tablespoon of butter and the olive oil. Add the shrimp to the skillet in a single layer and cook for 1-2 minutes per side, or until pink and just cooked through. Remove the shrimp and set aside on a plate.

Step 4

In the same skillet, add the remaining 1 tablespoon of butter and the minced garlic. Cook for 1 minute, stirring frequently, until the garlic is fragrant.

Step 5

Lower the heat to medium-low and add the heavy cream, stirring to combine. Bring the mixture to a gentle simmer and let it cook for 2-3 minutes to thicken slightly.

Step 6

Stir in the Parmesan cheese and lemon juice until the cheese is melted and the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 7

Add the cooked fettuccini to the skillet with the sauce. Toss to coat the pasta evenly in the creamy sauce.

Step 8

Return the shrimp to the skillet and gently mix to combine with the pasta. Cook for 1-2 minutes to warm the shrimp through.

Step 9

Taste and adjust the seasoning with additional salt, black pepper, or optional red pepper flakes, if desired.

Step 10

Serve the shrimp fettuccini immediately, garnished with chopped parsley and extra grated Parmesan if desired.
