Ingredients

  • 450 grams medium shrimp (peeled and deveined)
  • 300 grams rotini pasta
  • 120 grams mayonnaise

  • 1 teaspoon Dijon mustard
  • 2 cloves garlic (minced)
  • 2 stalks celery (diced)
  • 0.5 cup red onion (finely diced)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions until al dente. Drain the pasta and rinse it under cold water to cool. Set aside.

Step 2

While the pasta is cooking, heat the olive oil in a skillet over medium heat. Season the shrimp with a pinch of salt and black pepper. Cook the shrimp for 2-3 minutes per side, or until they turn pink and opaque. Remove from heat and allow them to cool.
