Ingredients

  • 1 whole Baguette
  • 3 tablespoons Olive oil
  • 1 pound Shrimp
  • 3 cloves Garlic cloves
  • 1 cup Ricotta cheese
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 2 tablespoons Parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the baguette into 1/2-inch thick pieces on a slight diagonal. You should end up with about 12–15 slices.

Step 3

Arrange the baguette slices on a baking sheet. Brush one side of each slice with 2 tablespoons of olive oil.

Step 4

Bake the baguette slices in the preheated oven for 8–10 minutes, or until golden and crisp. Remove and let cool.

Step 5

While the bread is baking, peel and devein the shrimp, if not already done.

Step 6

Mince the garlic cloves.

Step 7

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.

Add the shrimp to the skillet, and season with salt, black pepper, and red pepper flakes. Cook for 2–3 minutes per side, or until shrimp are pink and fully cooked through. Remove from heat and set aside.

In a small bowl, mix the ricotta cheese with lemon zest, lemon juice, and half of the chopped parsley. Stir until smooth and creamy.

To assemble, spread about 1 tablespoon of the ricotta mixture onto each crostini slice. Top with one or two shrimp, depending on their size.

Garnish the finished crostini with the remaining parsley and an extra pinch of red pepper flakes (optional). Serve immediately and enjoy!
