  • 1 tbsp Oyster sauce
  • 1 tbsp Shaoxing wine (optional)
  • 2 tbsp Neutral cooking oil (e.g., vegetable or canola)
  • 3 cloves Garlic (minced)
  • 1 tbsp Fresh ginger (finely julienned)
  • 1 medium Yellow onion (sliced)
  • 2 cups Bean sprouts
  • 3 stalks Scallions (cut into 2-inch segments)
  • 1 tsp Sesame oil
  • 0.5 tsp Salt
  • 0.25 tsp White pepper

Directions

Step 1

If using dried rice noodles, soak them in warm water for 20-30 minutes or until pliable. If using fresh noodles, gently separate them. Drain and set aside.

Step 2

In a small bowl, mix the soy sauce, dark soy sauce, oyster sauce, Shaoxing wine (if using), sesame oil, salt, and white pepper. Set the sauce aside.

Step 3

Heat 1 tablespoon of cooking oil in a large wok or skillet over medium-high heat. Add the shrimp and stir-fry for 1-2 minutes until they turn pink and are mostly cooked through. Remove the shrimp from the wok and set aside.

Add the remaining tablespoon of oil to the wok. Add the minced garlic, julienned ginger, and sliced onion. Stir-fry for 1-2 minutes until fragrant.

Taste and adjust seasoning if necessary. Serve immediately while hot, garnished with additional scallions if desired.
