  • 2 stalks celery (diced)
  • 1 large carrot (peeled and diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1 piece chipotle chile in adobo sauce (chopped)
  • 2 tablespoons tomato paste
  • 1 cup dry white wine
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 piece bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the shrimp and cook for 2 minutes per side until pink. Remove the shrimp and set aside; reserve a few for garnish, if desired.

In the same pot, melt the butter. Add the chopped onion, celery, and carrot. Cook for 5-7 minutes until softened, stirring occasionally.

Stir in the minced garlic, smoked paprika, and chopped chipotle chile. Cook for 1 minute, releasing the flavors.

Add the tomato paste and stir well. Cook for another 2 minutes until the paste darkens slightly.
