Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 small jalapeño, finely diced (optional for heat)
  • 0.5 cup dry white wine
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 servings cooked white rice or pasta (for serving)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Add the minced garlic, diced red bell pepper, and optional jalapeño. Sauté for 3-4 minutes until the vegetables soften.

Step 4

Deglaze the skillet by pouring in the white wine. Let it simmer for 2-3 minutes to reduce slightly.

Step 5

Lower the heat to medium-low and stir in the heavy cream, parmesan cheese, paprika, salt, and black pepper. Let the sauce simmer for 3-4 minutes until thickened.

Step 6

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 2 minutes to reheat the shrimp.

Step 7

Garnish with freshly chopped parsley and serve immediately over cooked rice or pasta.
