Ingredients

  • 500 grams raw shrimp (peeled and deveined)
  • 2 cloves garlic
  • 2 stalks green onion
  • 1 piece egg white
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon ground white pepper
  • 0.5 teaspoon salt
  • 100 grams panko breadcrumbs (optional, for coating)
  • 500 milliliters oil (for frying)

Directions

Step 1

Rinse the raw shrimp under cold water and pat them dry with paper towels. Chop them finely or pulse in a food processor until they form a paste-like consistency.

Step 2

Finely mince the garlic and green onions. Add them to the shrimp paste in a mixing bowl.

Step 3

Add the egg white, cornstarch, soy sauce, sesame oil, ground white pepper, and salt to the bowl. Mix everything thoroughly until well combined.

Step 4

Using slightly wet hands, scoop about a tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used up.

Step 5

If you prefer a crispy outer layer, roll the shrimp balls in panko breadcrumbs until evenly coated.

Step 6

Heat oil in a deep pan or wok to about 175°C (350°F). Test the oil by dropping a small piece of the mixture into it—it should sizzle immediately.

Step 7

Carefully place the shrimp balls into the hot oil, a few at a time, to avoid overcrowding. Fry for 3-4 minutes or until golden brown and cooked through.

Step 8

Using a slotted spoon, remove the cooked shrimp balls and place them on a plate lined with paper towels to drain excess oil.

Step 9

Serve the shrimp balls hot with your favorite dipping sauce, such as sweet chili or soy sauce.
