Ingredients

  • 454 grams large shrimp, peeled and deveined
  • 250 grams asparagus, trimmed and cut into 2-inch pieces
  • 400 grams canned white beans (such as cannellini), drained and rinsed
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic, finely minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped
  • 150 grams cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced

Directions

Step 1

Bring a pot of salted water to a boil. Add the asparagus and blanch for 2-3 minutes, until bright green and tender-crisp. Immediately transfer to an ice bath to cool, then drain and set aside.

Step 2

In the same pot of boiling water, add the shrimp and cook for 2-3 minutes, until opaque and cooked through. Drain and set aside to cool.

Step 3

In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, Dijon mustard, honey, salt, and black pepper to create the dressing.

Step 4

In a large mixing bowl, combine the white beans, asparagus, shrimp, cherry tomatoes, red onion, and parsley.

Step 5

Pour the dressing over the salad and gently toss to coat all ingredients evenly.

Step 6

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 7

Chill the salad in the refrigerator for 15-20 minutes to allow flavors to meld, or serve immediately.
