  • 3 cups chicken stock
  • 1.5 cups long-grain white rice
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 stalks green onions, sliced (for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 hot sauce (optional, to taste)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sliced Andouille sausage and cook until browned on both sides, about 5 minutes. Transfer to a plate and set aside.

In the same pot, add the remaining tablespoon of olive oil. Sauté the diced onion, green bell pepper, and celery until softened, about 5 minutes.
