Ingredients

  • 1 lb jumbo shrimp
  • 1 small (seedless) watermelon
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tsp honey
  • 2 garlic cloves
  • 0.5 tsp red chili flakes
  • 2 tbsp (chopped) fresh mint leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Start by prepping the shrimp. Peel and devein the jumbo shrimp, leaving the tails on if desired. Rinse and pat dry with paper towels.

Step 2

Cut the watermelon into 1-inch-thick slices. Remove the rind and seeds, then cut the flesh into large, bite-sized cubes.

Step 3

In a small bowl, mix together soy sauce, lime juice, honey, minced garlic, and red chili flakes to create a marinade. Set aside.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp, season with salt and pepper, and sauté for 2-3 minutes per side, until they are fully cooked and have turned pink. Remove the shrimp from the skillet and set them aside on a plate.

Step 5

In the same skillet, add the remaining 2 tablespoons of olive oil. Once hot, gently add the watermelon cubes and sear them for 1-2 minutes on each side, just until warmed through and slightly caramelized. Avoid overcooking to maintain their structure.

Step 6

Return the cooked shrimp to the skillet with the watermelon. Pour the marinade over the shrimp and watermelon, stirring gently to coat. Cook for an additional 1-2 minutes until the sauce thickens slightly.

Step 7

Remove from heat and transfer the shrimp and watermelon mixture to a serving platter. Sprinkle with fresh chopped mint leaves for a burst of flavor and garnish.

Step 8

Serve immediately as a light main course or an elegant appetizer. Pair with jasmine rice or a side salad for a complete meal.
