Ingredients

  • 1 lb raw shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • 0.5 tsp red chili flakes
  • 2 cups cherry tomatoes (halved)
  • 2 tbsp tomato paste
  • 0.25 cup white wine (optional)
  • 0.25 cup fresh basil leaves (chopped)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup parmesan cheese (grated, for garnish)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and red chili flakes to the skillet and sauté for 1-2 minutes until fragrant.

Step 3

Stir in the tomato paste and cook for 1-2 minutes, allowing it to deepen in flavor.

Step 4

Add the halved cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until they soften and begin to break down.

Step 5

If using, deglaze the skillet with white wine and let it simmer for 1-2 minutes until slightly reduced.

Step 6

Season the shrimp with salt and pepper, then add them to the skillet. Cook for 2-3 minutes on each side until they turn pink and are fully cooked.

Step 7

Stir in the fresh basil and adjust seasoning with additional salt and pepper if needed.

Step 8

Remove the skillet from heat and garnish the dish with grated parmesan cheese before serving.

Step 9

Serve the shrimp and tomato mixture over cooked pasta, rice, or with crusty bread, if desired.
