Ingredients

  • 1 9-inch store-bought or homemade pie crust
  • 200 grams raw shrimp, peeled, deveined, and chopped
  • 150 grams cherry tomatoes, halved
  • 4 whole large eggs
  • 240 milliliters heavy cream
  • 120 milliliters milk
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Roll out the pie crust into a 9-inch tart or pie pan, trimming any excess. Prick the bottom with a fork to prevent bubbling.

Step 3

Bake the crust in the preheated oven for 10 minutes, then set it aside to cool slightly.

Step 4

Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 5

Add the chopped shrimp to the skillet. Cook for 3-4 minutes until the shrimp turns pink and opaque. Remove from heat and set aside.

Step 6

In a mixing bowl, whisk together the eggs, heavy cream, and milk until smooth. Stir in the Parmesan cheese, salt, black pepper, and paprika.

Step 7

Scatter the cooked shrimp and halved cherry tomatoes evenly over the partially baked crust.

Step 8

Pour the egg and cream mixture over the shrimp and tomatoes, ensuring an even distribution.

Step 9

Sprinkle the chopped parsley over the top as a garnish.

Step 10

Carefully transfer the quiche to the preheated oven and bake for 30-35 minutes or until the custard is set and the top is lightly golden.

Step 11

Remove the quiche from the oven and let it cool for at least 10 minutes before slicing and serving.

Step 12

Serve warm or at room temperature, and enjoy!
