Ingredients

  • 1 lb Shrimp (peeled and deveined)
  • 3 cups Cooked white rice
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 medium Red bell pepper (diced)
  • 3 tbsp Tomato paste
  • 2 tbsp Honey
  • 2 tbsp Soy sauce
  • 1 tbsp Apple cider vinegar
  • 1 tsp Paprika
  • 1 tsp Cornstarch
  • 0.25 cup Water
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 stalks Green onions (sliced for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Season the shrimp with salt and black pepper. Add shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add minced garlic and diced red bell pepper. Sauté for about 3-4 minutes until softened and fragrant.

In a small mixing bowl, whisk together tomato paste, honey, soy sauce, apple cider vinegar, paprika, cornstarch, and water until smooth. Pour the mixture into the skillet.

Step 5

Bring the sauce to a gentle simmer, stirring occasionally. Allow it to thicken slightly, about 3-4 minutes.

Step 6

Add the cooked shrimp back to the skillet, tossing them gently in the sweet red sauce until fully coated. Cook for another 2 minutes to warm the shrimp through.
