Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 cup snap peas
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons vegetable oil
  • 2 green onion, sliced for garnish
  • 2 cups steamed white rice (optional, for serving)

Directions

Step 1

In a small bowl, whisk together the soy sauce, hoisin sauce, honey, cornstarch, and water. Set this sauce mixture aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, until pink and cooked through. Remove the shrimp from the pan and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the pan. Stir in the minced garlic and ginger, cooking for about 30 seconds until fragrant.

Step 4

Add the red bell pepper, yellow bell pepper, snap peas, and carrot to the skillet. Stir fry for 3–4 minutes until the vegetables are slightly tender but still crisp.
