Ingredients

  • 12 oz Linguine or spaghetti
  • 1 lb Large shrimp, peeled and deveined
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 6 cloves Garlic, minced
  • 1 cup Dry white wine
  • 1 cup Chicken or seafood stock
  • 0.25 cup Fresh parsley, chopped
  • 2 tbsp Lemon juice
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Grated Parmesan cheese (optional for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat.

Step 3

Add the minced garlic and red pepper flakes to the skillet. Cook for 30 seconds to 1 minute, or until fragrant but not browned.

Step 4

Add the shrimp to the skillet, season with salt and black pepper, and cook for 2-3 minutes on each side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 5

Increase the heat to medium-high and pour in the white wine. Use a wooden spoon to scrape up any browned bits on the bottom of the skillet.

Step 6

Add the chicken or seafood stock to the skillet. Simmer for 5-7 minutes, or until the liquid is reduced by half.

Step 7

Reduce the heat to low and whisk in the remaining 2 tablespoons of butter and the lemon juice. Stir in the chopped parsley.

Return the cooked shrimp to the skillet, along with the drained pasta. Toss to coat everything in the sauce. If the mixture seems dry, add a splash of the reserved pasta water until the desired consistency is reached.

Step 9

Taste and adjust the seasoning with additional salt, pepper, or lemon juice as needed.

Serve immediately, garnished with additional parsley and grated Parmesan cheese, if desired.
