Ingredients

  • 12 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 0.5 tsp red pepper flakes
  • 3 tbsp lemon juice
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 gallon water (for boiling pasta)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain and set the pasta aside.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.

Step 3

Add the minced garlic and red pepper flakes to the skillet. Sauté for 1-2 minutes, stirring constantly, until the garlic is fragrant but not browned.

Step 4

Increase the heat to medium-high and add the shrimp to the skillet. Sprinkle them with salt and black pepper. Cook for 2-3 minutes on one side, then flip and cook for another 2-3 minutes, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 5

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Stir in the lemon juice and the reserved pasta water (start with 1/2 cup and add more as needed to achieve your desired sauce consistency). Let the sauce simmer for 2 minutes.

Step 6

Add the cooked pasta to the skillet and toss to coat it in the sauce.

Step 7

Return the shrimp to the skillet and gently mix to combine. Cook for an additional 1-2 minutes to heat everything through.

Step 8

Remove the skillet from heat and sprinkle the dish with grated Parmesan cheese and fresh parsley. Toss lightly to distribute.

Step 9

Serve immediately with extra grated Parmesan and lemon wedges, if desired.
