Ingredients

  • 1 lb large shrimp (peeled and deveined)
  • 4 oz pancetta (diced)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 0.5 cup dry white wine
  • 2 tbsp lemon juice (freshly squeezed)
  • 0.25 cup chicken or seafood stock
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper (freshly ground)
  • 2 tbsp fresh parsley (chopped)
  • 0 cooked pasta or crusty bread (optional, for serving)

Directions

Step 1

Pat the shrimp dry with paper towels and season with 1/4 tsp of salt and 1/4 tsp of black pepper.

Step 2

Heat a large skillet over medium heat and add the olive oil. Once hot, add the diced pancetta and cook for 4-5 minutes, stirring occasionally, until crispy. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Add the butter to the skillet with the pancetta fat. Once melted, stir in the minced garlic and red pepper flakes. Cook for about 1 minute until fragrant, being careful not to burn the garlic.

Step 4

Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, or until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.

Step 5

Deglaze the skillet by pouring in the white wine, scraping the bottom of the pan to release any browned bits. Let the wine simmer for 2-3 minutes to reduce slightly.

Step 6

Stir in the chicken or seafood stock and lemon juice. Simmer for an additional 2 minutes to combine flavors.

Step 7

Return the shrimp and pancetta to the skillet, tossing to coat in the sauce. Cook for another minute until heated through.

Step 8

Remove the skillet from the heat and sprinkle fresh parsley over the top. Adjust seasoning with additional salt and pepper, if needed.

Step 9

Serve immediately over cooked pasta or alongside crusty bread to soak up the sauce. Enjoy!
