Ingredients

  • 12 oz angel hair pasta
  • 1 lb shrimp (peeled and deveined)
  • 8 oz button mushrooms (sliced)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 0.33 cup chicken or vegetable stock
  • 2 tbsp lemon juice
  • 0.25 cup parmesan cheese (grated)
  • 2 tbsp parsley (chopped, for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the angel hair pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp, season with salt and black pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

In the same skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until the mushrooms are golden and tender.
