Preheat your oven to 375°F (190°C). Grease a large casserole dish with butter or a nonstick spray and set aside.
Bring a large pot of salted water to a boil. Add the mirlitons and boil for 20-25 minutes, or until fork-tender. Carefully remove them from the water and let them cool until they’re safe to handle.
Once cooled, cut each mirliton in half lengthwise and remove the seed. Scoop out the flesh with a spoon, being careful not to puncture the thin skin, and place the flesh into a medium bowl. Chop the flesh into small pieces and set aside.
In a large skillet, melt the butter and olive oil over medium heat. Add the onion, bell pepper, and celery, and sauté for 5-7 minutes until softened and translucent.
Stir in the garlic and cook for 1 more minute until fragrant. Add the chopped shrimp and cook for 3-4 minutes, or until the shrimp turn pink and opaque.
Add the chopped mirliton flesh to the skillet along with the parsley, green onions, salt, black pepper, Cajun seasoning, and paprika. Stir well to combine all the flavors and cook for 3-4 minutes.
Remove the skillet from heat and stir in the breadcrumbs and seafood stock. Mix until the breadcrumbs absorb the liquid and the dressing reaches a moist but not overly wet consistency.
Taste the mixture and adjust seasoning if needed. If you’d like, stir in the optional Parmesan cheese for added richness.
Transfer the mixture to the prepared casserole dish, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and slightly crispy.
