Ingredients

  • 12 large pieces Shrimp (peeled and deveined)
  • 1 medium Mango (ripe, diced)

  • 1 medium Lime (juiced)
  • 1 tablespoon Olive oil
  • 1 teaspoon Honey
  • 2 tablespoons Fresh cilantro (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 pieces Skewers (optional)

Directions

Step 1

Bring a medium pot of water to a boil. Add the shrimp and cook for 2–3 minutes or until they turn pink and are fully opaque. Drain and rinse under cold water to stop the cooking process.

Step 2

While the shrimp cool, prepare the mango, cucumber, and red onion. Dice the mango into small cubes, peel and dice the cucumber, and finely dice the red onion.
