Ingredients

  • 12 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1 whole lemon, juiced and zested
  • 2 cups baby spinach
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to the package instructions until al dente. Reserve 1 cup of pasta water before draining and set the pasta aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp, season with salt and black pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté the garlic for 1 minute until fragrant.

Add the cherry tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until softened and slightly blistered.
