Ingredients

  • 1 pound shrimp, deveined and peeled
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 large eggs, beaten
  • 4 cups cooked white rice, cooled
  • 2 cups Napa cabbage, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 3 scallions, sliced (green and white parts separated)
  • 1 medium carrot, finely diced
  • 1 cup frozen peas
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a small bowl, mix the soy sauce, oyster sauce, and sesame oil. Set aside.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

Add the shrimp and cook for 2-3 minutes per side until they are pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the beaten eggs and scramble until just set, then remove the eggs and set aside with the shrimp.
