Ingredients

  • 12 pieces Raw shrimp, peeled and deveined
  • 150 grams Chorizo sausage, finely sliced
  • 2 pieces Baguette or sandwich rolls
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 0.5 teaspoons Smoked paprika
  • 4 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice
  • 1 cup Arugula or spinach leaves
  • 1 medium Tomato, thinly sliced
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Add the sliced chorizo to the skillet and cook for 3-4 minutes, stirring occasionally, until browned and slightly crispy. Remove the chorizo from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and cook for 1 minute until fragrant.

Add the shrimp to the skillet and sprinkle with the smoked paprika, salt, and black pepper. Cook for 2 minutes per side or until the shrimp are pink and cooked through. Remove from heat and set aside.
