Ingredients

  • 450 grams Large shrimp, peeled and deveined
  • 400 grams Canned white beans, drained and rinsed
  • 250 grams Cherry tomatoes, halved
  • 1 Zucchini, thinly sliced
  • 1 Red onion, thinly sliced
  • 3 tablespoons Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 Lemon, sliced
  • 4 sheets Aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare four large sheets of aluminum foil, about 12 inches by 12 inches each.

Step 3

In a large bowl, combine the shrimp, white beans, cherry tomatoes, zucchini, and red onion.

Step 4

Drizzle the mixture with olive oil and add minced garlic, parsley, oregano, paprika, salt, and black pepper. Toss everything together until well mixed.

Step 5

Divide the mixture evenly among the four sheets of foil, placing the ingredients in the center of each sheet.

Step 6

Top each packet with a slice or two of lemon for added flavor.

Step 7

Fold the sides of the foil over the mixture to create a sealed packet, making sure none of the liquid leaks out.

Step 8

Place the packets on a baking sheet and bake in the preheated oven for 20 minutes, or until the shrimp are fully cooked and pink.

Step 9

Carefully open the packets, allowing the steam to escape, and serve immediately. Garnish with extra parsley if desired.
