Ingredients

  • 12 oz Spaghetti or linguine
  • 1 lb Large shrimp (peeled and deveined)
  • 3 tbsp Olive oil
  • 4 Garlic cloves (minced)
  • 0.5 tsp Red pepper flakes
  • 0.5 cup Fresh basil leaves (chopped)
  • 1 Lemon (zested and juiced)
  • 0.5 cup Parmesan cheese (grated)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet in a single layer. Sprinkle with a pinch of salt and black pepper and cook for 2 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil, minced garlic, and red pepper flakes. Sauté for 1-2 minutes, stirring constantly, until fragrant but not browned.

Step 5

Lower the heat to medium-low and return the shrimp to the skillet. Stir in the lemon juice and lemon zest, mixing well.

Step 6

Add the cooked pasta to the skillet along with the reserved pasta water. Toss to coat the pasta evenly in the sauce.

Step 7

Stir in the chopped basil and half of the grated Parmesan cheese. Mix well and adjust seasoning with additional salt or black pepper if needed.

Step 8

Serve the pasta immediately. Garnish with the remaining Parmesan cheese and additional fresh basil, if desired.
