Ingredients

  • 8 ounces angel hair pasta
  • 1 pound large shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)

  • 2 tablespoons olive oil
  • 3 cloves garlic cloves (minced)
  • 0.5 cup chicken or vegetable broth
  • 1 whole lemon (juiced and zested)
  • 0.5 teaspoons red pepper flakes
  • 0.25 cup Parmesan cheese (grated)
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the angel hair pasta until al dente, according to the package instructions. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes per side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and the asparagus. Sauté for 4-5 minutes, or until the asparagus is tender-crisp. Remove the asparagus from the skillet and set aside with the shrimp.
