Ingredients

  • 8 ounces angel hair pasta
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 cup chicken broth
  • 0.5 teaspoons red pepper flakes
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the angel hair pasta according to the package instructions until just al dente. Reserve 1/2 cup of pasta water, then drain pasta and set aside.

Step 2

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat.

Step 3

Add the minced garlic to the hot skillet and sauté for about 30 seconds, or until fragrant.

Step 4

Stir in the shrimp, red pepper flakes, salt, and black pepper. Cook the shrimp for 2-3 minutes per side, until pink and fully cooked. Remove the shrimp from the skillet and set aside.

In the same skillet, add chicken broth and lemon juice. Bring to a simmer, scraping up any brown bits from the bottom of the pan with a wooden spoon.

Add the cooked pasta to the skillet along with the reserved pasta water. Toss the pasta to coat it in the sauce.

Return the cooked shrimp to the skillet and stir gently to combine.

Stir in the remaining 2 tablespoons of butter and sprinkle the dish with fresh parsley and grated Parmesan cheese.
