Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 cloves Garlic, minced
  • 2 cups Heavy cream
  • 1.5 cups Freshly grated Parmesan cheese
  • 0.25 teaspoon Nutmeg, freshly ground (optional)
  • 12 ounces Fettuccine pasta, dried
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest. Set the pasta aside.

Step 2

Season the shrimp with salt, black pepper, and garlic powder.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and melt the unsalted butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Pour in the heavy cream and stir continuously while simmering for 2-3 minutes.

Step 6

Gradually whisk in the Parmesan cheese until fully melted and the sauce becomes smooth and creamy. Add the nutmeg if using, and season with additional salt and pepper to taste.

Step 7

Reduce the heat to low and add the cooked pasta to the skillet. Toss to coat the pasta in the Alfredo sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.

Step 8

Add the cooked shrimp back into the skillet and gently toss to combine.

Step 9

Remove the skillet from heat and sprinkle with chopped parsley for garnish.

Step 10

Serve immediately and enjoy this decadent Shrimp Alfredo Extraordinaire!
