Directions

Step 1

Begin by making hung curd: Place a muslin or cheesecloth in a strainer over a bowl. Pour the yogurt into the cloth and bundle it up, tying it with a string. Hang this bundle in a cool place for about 6-8 hours or overnight to allow the whey to drain fully, resulting in a thick hung curd.

Soak the saffron strands in warm milk for about 10 minutes to release their color and flavor.

Shell the cardamoms and crush the seeds into a fine powder using a mortar and pestle.
