Ingredients

  • 125 grams Unsalted butter, softened
  • 125 grams Caster sugar
  • 1 large Egg yolk
  • 250 grams All-purpose flour
  • 1 teaspoon Lemon zest (optional, for flavor)
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy, using a wooden spoon or an electric mixer.

Step 3

Add the egg yolk and vanilla extract (and lemon zest if using). Mix well until fully incorporated.

Step 4

Gradually sift in the all-purpose flour and salt, combining with the butter mixture until the dough comes together. Do not overmix; the dough should be soft but not sticky.

Step 5

Lightly flour your work surface and roll out the dough to approximately 5mm thickness.

Step 6

Using a round or fluted biscuit cutter, cut out shapes and transfer them to the prepared baking tray, leaving a little space between each biscuit as they will expand slightly while baking.

Step 7

Gather any leftover dough, roll it out again, and repeat the cutting process until all dough is used up.

Step 8

Bake in the preheated oven for 12-15 minutes or until the edges of the biscuits are lightly golden.

Step 9

Remove from the oven and let the biscuits cool on the tray for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the Shrewsbury Biscuits in an airtight container for up to one week, or enjoy them fresh with a cup of tea!
