Ingredients

  • 3 pounds Beef chuck roast
  • 4 cups Beef broth
  • 0.25 cup Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 pieces Hoagie rolls or crusty sandwich rolls
  • 6 slices Provolone cheese slices

Directions

Step 1

Place the beef chuck roast in a slow cooker.

Step 2

Add the beef broth, soy sauce, Worcestershire sauce, minced garlic, onion powder, dried thyme, salt, and pepper to the slow cooker. Stir the liquid to combine.

Step 3

Cover the slow cooker with a lid and cook on low heat for 8 hours, or until the beef is tender and shreds easily with a fork.

Step 4

Remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker to soak up the juices.

Step 5

Preheat your oven to 350°F (175°C).

Step 6

Slice the hoagie rolls in half and place them on a baking sheet, cut side up.

Step 7

Top each bottom half of the roll with a portion of the shredded beef and 1 slice of provolone cheese.

Step 8

Bake in the oven for 5-7 minutes, or until the cheese is melted and the rolls are slightly toasted.

Step 9

While the sandwiches are baking, strain the cooking liquid from the slow cooker through a fine-mesh strainer to remove solids, creating a clean au jus for dipping.

Step 10

Serve the sandwiches warm with a small bowl of au jus on the side for dipping.
