  • 3 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 Yellow onion, diced
  • 4 Garlic cloves, minced
  • 2 cups Beef broth
  • 1 14-ounce can Canned diced tomatoes with green chiles
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 teaspoon Ground cumin
  • 1 tablespoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Oregano
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Fresh cilantro, chopped (optional)

Directions

Step 1

Trim any excess fat from the beef chuck roast and season it evenly with salt and black pepper on all sides.

Step 2

Set a large heavy-bottomed skillet or Dutch oven over medium-high heat and add the olive oil. Once hot, sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the seared beef to a slow cooker.

Step 3

In the same skillet over medium heat, add the diced yellow onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, cooking for an additional 1 minute, until fragrant.
