Ingredients

  • 2 pounds Beef chuck roast
  • 2 tablespoons Olive oil
  • 1 cup Beef broth
  • 1 large Onion
  • 4 Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 Flour tortillas
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Sour cream
  • 0.25 cup Chopped cilantro
  • 4 Lime wedges

Directions

Step 1

Season the beef chuck roast on all sides with salt, black pepper, cumin, chili powder, and paprika.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef until browned on all sides, about 3-4 minutes per side. Remove the beef and set aside.

Step 3

Slice the onion into thin strips and mince the garlic cloves.

Step 4

In the same skillet, add the onions and garlic. Sauté for 2-3 minutes until softened and fragrant.

Step 5

Pour in the beef broth, scraping the bottom of the skillet to deglaze and release any browned bits.

Step 6

Transfer the seared beef, onions, garlic, and broth to a slow cooker. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender and easily shreds with a fork.

Step 7

Once cooked, shred the beef using two forks and mix it into the juices in the slow cooker to keep it moist and flavorful.

Step 8

Warm the flour tortillas in a dry skillet or microwave until pliable.

Step 9

Assemble the wraps by layering shredded beef onto the tortilla, followed by shredded lettuce, diced tomatoes, shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped cilantro.

Step 10

Fold the sides of the tortilla inward, then roll it up tightly from the bottom to form a wrap.

Step 11

Serve with lime wedges on the side for an extra citrusy kick.
