  • 0.5 cup Soy sauce
  • 2 tablespoons Mirin
  • 2 tablespoons Sake
  • 3 cloves Garlic
  • 1 inch Ginger
  • 3 Green onions
  • 400 grams Ramen noodles
  • 200 grams Chashu pork
  • 2 Soft-boiled eggs
  • 2 Nori sheets
  • 50 grams Menma
  • 1 teaspoon Sesame oil

Directions

Step 1

Start by making the broth: in a large pot, combine the chicken stock and dashi stock over medium heat.

Step 2

Add soy sauce, mirin, and sake to the pot.

Step 3

Crush the garlic cloves and slice the ginger piece; add both to the pot along with 2 sliced green onions.

Step 4

Bring the mixture to a simmer, then reduce the heat to low, cover, and let it simmer gently for about 45 minutes to develop the flavors.

While the broth is cooking, prepare your toppings. Slice the chashu pork, make the soft-boiled eggs, and cut the nori sheets into halves.
