Preheat your oven to 350°F (175°C) and line three 6-inch round cake pans with parchment paper.
In a mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, sift together the all-purpose flour and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the whole milk, starting and ending with the dry ingredients. Mix until just combined.
Stir in the green gel food coloring until evenly distributed, creating a vibrant green batter.
Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula.
