Ingredients

  • 2 pounds beef tenderloin (trimmed and tied)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (freshly ground)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic cloves (smashed)
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tablespoons Dijon mustard

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Generously season the beef tenderloin with kosher salt and freshly ground black pepper on all sides. Allow it to rest at room temperature for 30 minutes to ensure even cooking.

Step 3

Heat a large oven-safe skillet over medium-high heat. Add olive oil and heat until shimmering.

Step 4

Carefully place the tenderloin into the skillet and sear on all sides (including the ends) until deeply browned, about 2-3 minutes per side.

Step 5

Once all sides are seared, reduce the heat to medium and add the butter, smashed garlic cloves, rosemary, and thyme to the skillet.

Step 6

Tilt the skillet slightly and use a spoon to baste the tenderloin with the melted butter for about 1-2 minutes to infuse it with flavor.

Step 7

Brush the tenderloin with Dijon mustard, then transfer the skillet to the preheated oven.

Step 8

Roast the tenderloin until it reaches your desired doneness. For medium-rare, aim for an internal temperature of 125°F (52°C), about 20-25 minutes, depending on thickness.

Step 9

Remove the skillet from the oven and transfer the tenderloin to a cutting board. Tent loosely with aluminum foil and let it rest for 10-15 minutes to allow the juices to redistribute.

Step 10

Slice the tenderloin into thick medallions and serve immediately, garnished with additional rosemary or thyme if desired. Pair with roasted vegetables or creamy mashed potatoes for a complete meal.
