  • 6 large eggs
  • 0.25 cups milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoons olive oil
  • 0.5 medium onion, diced
  • 2 cloves garlic, minced
  • 1 small bell pepper, diced
  • 2 cups spinach, chopped
  • 0.5 cups shredded cheese (e.g., cheddar or mozzarella)
  • 0.5 cups cooked meat (e.g., bacon, sausage, or ham), diced (optional)

Directions

Step 1

Preheat your oven broiler to high.

Step 2

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.

Step 3

Heat the olive oil in an oven-safe, nonstick skillet over medium heat.

Step 4

Add the diced onion and sauté for 2–3 minutes, or until softened.

Step 5

Stir in the minced garlic and diced bell pepper. Cook for another 2–3 minutes, until the bell pepper starts to soften.

Add the chopped spinach to the skillet and cook for 1–2 minutes, or until wilted.

If using cooked meat, stir it into the skillet at this point.
