Ingredients

  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2.25 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.75 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream
  • 12 pieces strawberries
  • 12 pieces marshmallows
  • 6 pieces wooden skewers

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, cream together the unsalted butter and granulated sugar using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour and salt.

Step 5

Gradually add the flour mixture to the butter mixture, mixing until a soft dough forms. Do not overmix.

Step 6

Roll out the dough on a lightly floured surface to about 1/4-inch thickness.

Step 7

Use a small cookie cutter (approximately 1.5 to 2 inches in diameter) to cut out shapes of your choice.

Step 8

Place the shortbread shapes onto the prepared baking sheet, spacing them about 1 inch apart.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the edges are just starting to turn golden. Let the cookies cool completely on a wire rack.

Step 10

In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave in 15-second intervals, stirring between each interval, until the chocolate is melted and smooth.

Step 11

Wash and hull the strawberries. Pat them dry with a paper towel to remove excess moisture.

Step 12

Once the shortbread cookies are cool, assemble the skewers by threading a cookie, a strawberry, and a marshmallow onto a wooden skewer. Repeat this pattern until the skewer is full, leaving some space at the bottom for handling. Divide ingredients evenly across the skewers.

Step 13

Drizzle the melted chocolate over the assembled skewers for a decorative and delicious touch. Allow the chocolate to set before serving.

Step 14

Serve your shortbread skewers immediately or store in an airtight container in the refrigerator for up to 2 days. Enjoy!
