Ingredients

  • 230 grams Unsalted butter, softened
  • 100 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 300 grams All-purpose flour
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 160°C (325°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream the softened butter and sugar together with a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 3

Add the vanilla extract and mix until incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the butter mixture, mixing just until the dough comes together. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface and gently knead it into a smooth ball.

Step 6

Roll the dough out to about 1/2 inch (1.25 cm) thickness. Use a cookie cutter to cut out your desired shapes and transfer them to the prepared baking sheets.

Step 7

Chill the cookies in the refrigerator for 10-15 minutes to prevent spreading during baking.

Step 8

Bake the cookies in the preheated oven for 18-20 minutes, or until the edges are just lightly golden. Avoid overbaking for a softer texture.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Enjoy your buttery shortbread cookies, or store them in an airtight container at room temperature for up to 7 days.
